VERNACCIA DI SAN GIMIGNANO D.O.C.G.
Wine produced exclusively from Vernaccia grapes from the vineyards of Palagione.
Spontaneous fermentation in open vat without any tank temperature control with maceration on the skins for at least 30 days. Stay of about 12 months on yeasts with weekly pumping over and bâtonnage.
Once bottled, it is then aged in glass for about 12 months.
Serve at 12-14°C in glasses enhancing the refinement.
